By popular demand - the recipe for Lobster Mac & Cheese

Lobster mac and cheese adapted from various recipes    2 cups cooked pasta, cooled Sauté one onion with 1-2 minced garlic cloves in 2T of butter Melt ¼ cup butter Add ¼ cup flour, stir well to make a smooth roux Add 1 tsp Dijon mustard and hot sauce to taste   Slowly add 1/4 cup white wine Add 1 cup milk 1 cup light cream, cook and stir until thickened Add cooked lobster meat chunked (not small pieces) from two lobsters as well as 2 cups of cooked drained smoked bacon, simmer on very low for 10 minutes, season with salt and pepper to taste.      Add 3 cups shredded Gruyère or smoked Gouda, stir until mixed. Fold in pasta. Top with: 1 cup shredded Gruyère or smoked Gouda 1 cup Italian bread crumbs mixed with ¼ cup melted butter Bake at 350 for about 20-30 minutes or until bubbling and heated through Enjoy Great leftover dish; flavours mingle and improve the following day
